This is a limited edition collaboration model with Nao Yamamoto, a traditional craftsman from Echizen.It was planned based on a request from the baker of Hakata's popular modern izakaya "English Shoryu".
The first batch was released in April 2023.We take into account the subtle force transmission and how the blade moves.The thickness of the ridge, the two-step radius (curve), the sharply pointed tip, etc. It is filled with the attention to detail that is unique to a chef who handles large quantities of chicken, including chicken meat.If you use the peak (back side) of the cutting tip, you can cleanly remove the fat attached to the skin.
